Ingredients
Dressing:
1/3 cup raw sour sream (see below)
1/4 cup apple juice concentrate (cascadian farms in the freezer section)
1/4 teaspoon tsp dijion mustard
Assembly:
Spring salad mix
1 cippolini onion (thinly sliced)
1 cup apple chips
2 tablespoons chopped pecans
3/4 cup cherry tomatoes (sliced)
Raw Sour Cream:
1 cup soaked cashews
1 cup filtered water
2 teaspoon lemon juice
2 teaspoon apple cider vinegar (or, coconut vinegar)
sea salt
Recipe Directions
1. To make the dressing, whisk all ingredients and set aside.
2. To assemble, In a large bowl, combine all ingredients. Slowly add dressing and mix well.
3. To make the sour cream, In a high-speed blender, blend all ingredients until smooth.

Just like Panera Breads! I even made this for a salad demo class the other week and I had many people agree - a raw Panera knockoff :)
